- 2 eggs, separated
- 2 tbsp coconut sugar
- 1 cup (240 ml) milk
- 1/4 cup (60 ml) water
- 1 cup (240 ml) plain yogurt
- 1/2 cup (120 ml) butter, melted
For serving:
- melted dark chocolate (Erbology's raw organic Cacao powder)
- Loov freeze-dried organic wild lingonberry powder
How to make
- Preheat your waffle maker to medium heat.
- In a large bowl, whisk together the dry ingredients: buckwheat flour, baking powder, salt, cinnamon, and lingonberry powder.
- In a separate bowl, beat the egg whites with the coconut sugar until soft peaks form.
- In another bowl, whisk together the egg yolks, melted butter, yogurt, milk, and water.
- Pour the wet mixture into the dry ingredients and stir until combined. A slightly lumpy texture is fine.
- Gently fold half of the egg whites into the batter until incorporated.
- Fold in the remaining egg whites, keeping the mixture light and airy. Avoid overmixing.
- Lightly grease the waffle maker and pour in the batter. Bake until golden and crisp.
- Melt the dark chocolate using a water bath.
- Serve the waffles warm, topped with melted chocolate and a light dusting of lingonberry powder.

For a deeper, more balanced finish, use a high-quality dark chocolate with a cacao content of at least 70%. The slight bitterness enhances the tartness of the lingonberry and brings out the nutty character of the buckwheat.
