The Olive Oil Revolution: Polyphenols, Freshness and the Pursuit of Quality
Why Some Olive Oils Are So Much More Than Olive Oil
For most people, olive oil is simply olive oil.
A bottle on a supermarket shelf. A drizzle over a salad. An ingredient in a recipe.
Yet behind every truly exceptional olive oil lies a story of variety, terroir, harvest timing, craftsmanship and patience. Together, these factors determine whether an oil becomes an ordinary cooking fat or one of the most fascinating plant foods nature has to offer.
At Farmatuur, our journey into olive oil started with a simple realization:
Not all extra virgin olive oils are created equal.
In fact, some olive varieties naturally produce significantly higher levels of polyphenols, the powerful plant compounds that have made olive oil one of the most studied foods in the Mediterranean diet.
Among these remarkable varieties are Coratina from Southern Italy, Picual from Spain and Koroneiki from Greece. Each brings its own personality, flavour profile and nutritional characteristics to the table.
What Are Polyphenols And Why Do They Matter?
Polyphenols are natural defence compounds produced by olive trees to protect themselves from heat, drought, insects and disease.
When we consume them, they appear to interact with many of the body's biological systems and have become a major focus of scientific research.
Among the most studied olive oil polyphenols are:
-
Oleocanthal
-
Oleacein
-
Oleuropein
-
Hydroxytyrosol
-
Tyrosol
These compounds are largely responsible for the bitterness and peppery sensation found in exceptional olive oils.
That little cough in the back of your throat after tasting a fresh olive oil?
That's often the work of oleocanthal.
Olive oil experts sometimes jokingly refer to this as the "one-cough", "two-cough" or "three-cough" test.
The stronger the peppery kick, the greater the likelihood that the oil contains significant amounts of these remarkable compounds.
The Only Health Claim Approved For Olive Oil Polyphenols
The European Food Safety Authority (EFSA) has approved a specific health claim for olive oil polyphenols:
"Olive oil polyphenols contribute to the protection of blood lipids from oxidative stress."
To qualify for this claim, an olive oil must contain sufficient amounts of hydroxytyrosol and related compounds.
Not every extra virgin olive oil qualifies. Many supermarket oils do not. The question is no longer whether olive oil contains beneficial compounds. The real question is: How much?
Meet Coratina: The Queen Of Polyphenols
If olive varieties had personalities, Coratina would be the rebel.
Originating from Puglia in Southern Italy, Coratina is renowned for producing some of the highest-polyphenol olive oils in the world.
Its oils are intensely green, boldly peppery and unapologetically bitter. Notes of fresh herbs, artichoke and black pepper dominate the flavour profile.
For many people tasting a true early-harvest Coratina for the first time, the reaction is immediate:
"This doesn't taste like olive oil."
Exactly.
Because most people have never tasted olive oil this fresh.
At Farmatuur, we are proud to offer both our beloved OLV Limits Green Machine and the exceptional Coratina d'Italia from ATTIMO. With 847 mg/kg polyphenols, this oil beautifully showcases why Coratina has become legendary among olive oil enthusiasts.
Meet Picual: Spain's Green Powerhouse
If Coratina is the rebel, Picual is the athlete.
Native to Jaén in Andalucía, Picual is Spain's most celebrated olive variety and one of the most widely planted cultivars in the world. Yet when harvested early and produced with care, it becomes something extraordinary.
Picual oils are vibrant, fresh and grassy, with notes of tomato leaf, green herbs and a clean, assertive finish. They combine impressive polyphenol levels with exceptional stability, making them wonderful both in the kitchen and on the table.
At Farmatuur, we currently offer two very different expressions of this remarkable olive variety.
Our Picual de España by ATTIMO showcases the vibrant, fresh and grassy side of Picual. Harvested early in Jaén, Spain, it delivers an impressive 675 mg/kg polyphenols alongside aromas of fresh tomato leaf, green herbs and cut grass. It is a beautiful all-round olive oil that combines flavour, freshness and nutritional richness in perfect balance.
Alongside it sits Green Queen by OLV Limits, another exceptional Picual olive oil, but with a very different personality. While still rich in polyphenols at 371 mg/kg, Green Queen is designed as the ultimate finishing oil, elegant, balanced and incredibly versatile. With its soft bitterness, gentle fruitiness and subtle peppery finish, it elevates vegetables, fish, grains, soups and salads without overpowering them. Think of it as the olive oil you reach for every day, quietly royal, effortlessly dependable and full of flavour.
Together, these two oils beautifully demonstrate why olive variety is only part of the story. The same Picual olive can produce dramatically different experiences depending on terroir, harvest timing and the philosophy of the producer. ATTIMO's Picual de España highlights the cultivar's vibrant green energy, while Green Queen expresses its elegance and everyday versatility. Side by side, they reveal the remarkable depth and diversity hidden within a single olive variety.
Meet Nocellara: Sicily's Gentle Charmer
Not every exceptional olive oil needs to be intense.
Sometimes greatness expresses itself through elegance.
Nocellara di Belice, one of Sicily's most prized olive varieties, produces oils that are softer, rounder and more approachable while still delivering impressive levels of polyphenols.
Fresh almond, green banana and delicate fruit notes are carried by a velvety texture and smooth finish that make this variety incredibly versatile.
Our Nocellara d'Italia from ATTIMO perfectly captures this character. It offers a gentler introduction to the world of high-quality olive oil while still delivering 400 mg/kg polyphenols, more than double what is often found in supermarket oils.
Why Terroir Matters
Wine lovers speak endlessly about terroir. Olive oil deserves the same respect.
The same olive variety grown in two different locations can produce dramatically different oils. Soil. Altitude. Rainfall. Sunlight. Wind. Biodiversity. Tree age. Every factor leaves its fingerprint on the final oil. Great olive oil is not manufactured. It is grown.
The producer's role is simply to preserve what nature has already created.
Why Harvest Timing Changes Everything
As olives ripen, polyphenol levels gradually decline.
The greener the olive, the higher its polyphenol concentration tends to be.
That is why the finest oils are harvested early.
The trade-off is significant.
Early-harvest olives produce substantially less oil, meaning producers sacrifice yield in exchange for quality.
This is one reason why truly exceptional olive oil costs more.
You are paying for concentration, freshness and craftsmanship.
Freshness: The Forgotten Ingredient
Most people never ask when an olive oil was harvested. They should.
Polyphenol levels decline over time, even when an oil is stored correctly.
A bottle harvested last month and one harvested eighteen months ago may both legally be sold as extra virgin olive oil.
Yet their flavour and nutritional profile can be dramatically different.
Freshness matters. Perhaps more than most people realize.
Olive Oil And Longevity
Can olive oil make you live longer?
No serious scientist would make such a simple claim.
But the research surrounding extra virgin olive oil is undeniably fascinating.
Large population studies consistently associate higher olive oil consumption with better long-term health outcomes and lower mortality risk.
Scientists continue to study its relationship with cardiovascular health, oxidative stress, inflammation, metabolic health and brain function.
Perhaps that is why olive oil remains one of the defining foods of the Mediterranean dietary pattern, one of the most researched dietary approaches in the world.
Why We Love It
At Farmatuur, we love Olive Oil because it perfectly embodies what we admire most:

And for those who prefer a softer, fruitier and more approachable expression of olive oil, we are equally proud to offer Nocellara d'Italia by ATTIMO, one of Sicily's most beloved olive varieties, loved for its velvety texture and gentle character.
Together, these oils showcase the extraordinary diversity hidden within a single ingredient. Different cultivars. Different landscapes. Different harvests. Different philosophies. Yet all united by the same commitment to freshness, transparency, craftsmanship and respect for nature.
Because once you've tasted truly exceptional olive oil, there is no going back.
